Ruby Red Beetroot & Sweet Potato Soup - nourishing and detoxifying, perfect for the winter months.



Ingredients - Serves 2/3

3 Beetroots, cubed

1 Large sweet potato, cubed

2 Shallots or 1 red onion

Dried Oregano

Olive oil

Goat's Feta

Finely ground pink or sea salt

1.5 Pints of filtered water


Directions

Add the beetroot, sweet potato and shallots to a pan with 1 pint of filtered water, bring to boil,

then simmer. Add a few large pinches of oregano and a splash of olive oil. Simmer for around 20 minutes, add more water and cook until the beetroot and sweet potato cubes are soft. Add salt to season and more oregano. Remove from heat and blend half of the soup, add this back into pan, this create a smooth and creamy base. Serve as is or crumble goat's feta onto soup and sprinkle with dried oregano.
